Hazelnut Cups
Hazelnuts
300 medjool dates pitted
300 GF Oats
1/2 cup Peanut butter
3 tbsp cacao powder
Pinch sea salt - optional
Topping ingredients:
Peanut butter
Dark chocolate
In a sauce pan, place some water and medjool dates and melt, until smooth. Add all the base ingredients (except for the hazelnuts) and mix until smooth. In a chopper, place the hazelnuts and blend.
Roll the mixture into 24 balls and roll in the chopped nuts. Put each ball onto a tray, press down and make a small indent in the centre of each one.
Melt the chocolate in a bowl over a pan of hot water. Add a tsp of almond/peanut butter to each cup. Top with a spoonful of the melted chocolate. Refrigerate to set and store in the fridge.

Back at it 💪
At 6️⃣5️⃣, this incredible mother and grandmother just crushed a full workout AFTER a Knee Replacement Surgery.
She trusted the process, followed the professionals, and showed up for herself,
1 hour strong, giving it her all ❗️

Batter Dipped Avocados 🥑 (Air Fryer)
2 avocados
1/2 cup all purpose flour
Pinch of Salt, pepper, paprika, oregano and Mixed Italian herbs
1/2 cup breadcrumbs
1 egg and splash of water
Seeds of choice
Cooking spray
Slice avocados in half, lengthwise, removing the pit. Peel the skin off and slice each avocado.
In 3 separate bowls, place flour, salt, pepper and herbs. Stir until combined.
In another bowl, add the egg and a bit of water and whisk.
In the last bowl, place the breadcrumbs and seeds, and stir.
Coat the avocado slices, one at a time, first in the flour mixture, then in the egg, and lastly in the breadcrumbs.
Spray basket of air fryer with non stick spray. Add the breaded avocados and let them cook for 20minutes or until golden brown at 200°C . Turn over after 10minutes.
