This savory "Spanish" octopus is perfect for pairing with bold sauces and a touch of char. 🐙

Ingredients: 🍽️
• Precooked octopus tentacles, white wine, olive oil, smoked paprika, and Creole seasoning mix
• Chorizo sauce: 1 pack chorizo, pancetta or salami, diced shallots, white wine, red wine vinegar, Dijon mustard, heavy cream, and paprika
• Fennel sauce: 1 fennel bulb, oil, fresh garlic, and heavy cream
• Garnish: Kalamata olives, sliced Serrano peppers, and shallots

Directions: 📝
1️⃣ Marinate the tentacles in wine, olive oil, paprika, and Creole seasoning for a few hours.
2️⃣ Sauté the chorizo, pancetta, and shallots.
3️⃣ Blend into a puree, then bring back to heat in a skillet with wine and vinegar to reduce.
4️⃣ Stir in a hit of Dijon mustard, heavy cream, and paprika.
5️⃣ Coat the fennel pieces in oil, cook until charred, and blend with garlic and cream into a thick puree.
6️⃣ Sauté the garnish elements, heat the olives to reduce the vinegar taste, and get the tentacles on a hot grill for a few minutes per side.
7️⃣ Layer the chorizo sauce on the base, arrange the grilled octopus, add the fennel puree, and top with your garnishes.
