Friday night dinner gets a little easier when crispy chicken is involved. Mike’s Chicken served up made-to-order bone-in chicken, sandwiches, fries, and biscuits after a busy evening of flag football in Plano. 🍗

The bone-in chicken stood out for its crisp exterior and juicy center, while the chicken sandwich, fries, and extra biscuits made the meal an easy family win. The casual order-at-the-counter setup kept things simple too. 🍟

With a Frisco location coming soon to the former Slim Chickens space off the Tollway, this local favorite may be much closer to Hollyhock families before long. 🏡

Resident contributor Barrett Benoit’s Spicy Bacon Cheese Grits combines creamy grits, bacon, peppers, green onions, and an optional jammy egg. 🍳

Ingredients: 🍽️
🍚 Instant grits, prepared according to package directions
🧀 1 to 2 oz sharp cheddar cheese
🧂 Salt and pepper, or your favorite seasoning, to taste
🌶️ 2 jalapeño or serrano peppers
🥓 2 strips of bacon
🧅 Chopped green onions
🥚 1 egg

Directions: 📝
1️⃣ Remove the seeds from the peppers and slice them into coins.
2️⃣ Chop the green onions, grate the cheese, and cut the bacon into smaller pieces.
3️⃣ Bring water to a boil and prepare the grits according to the package.
4️⃣ Season the grits, then remove from heat and stir in the cheese. Cover to keep warm.
5️⃣ Sauté the bacon over medium heat. When it is nearly done, add the peppers and cook them down.
6️⃣ Add the grits to a bowl, top with the bacon and pepper mixture, and garnish with green onions.
7️⃣ For extra protein, add a jammy egg cooked in boiling water for about 6 to 7 minutes.

Before Hollyhock became their home, Michael and Catherine could already picture the life they hoped to build here. 🏡

While driving through the neighborhood during construction, they noticed kids riding bikes, playing outside, and simply enjoying childhood together. It was the kind of community they could imagine raising a family in. ✨
