These pheasant meatballs are another recipe worth trying, and they are perfect for batch cooking.
They're packed with punchy flavours, including lemongrass, ginger, fish sauce and lime and go great with salad, flatbread, or straight into a pasta sauce - your call.
Double the batch and freeze the extras for a great, quick midweek dinner.

🦆 Best of luck for tomorrow 🦆
With the wildfowling season kicking off tomorrow, we wish everyone a safe and successful season, with plenty of good days in the field and, of course, straight shooting!
Let’s also remember what wildfowling is all about — respect for quarry, respect for the environment and respect for the privilege of being out there.
Shoot sustainably, and take only what you can make good use of. If you shoot it, eat it. Every bird taken should be treated with respect and never wasted.
Here’s to cold mornings, strong winds, good company, and happy memories made along the way.
Stay safe, shoot straight, respect the quarry — and enjoy the season.
Good luck everyone! 🦆🌊🎯

We thank all those who attended and passed our DSC1 course at Baronscourt Estate over the weekend. We also thank the students for their engagement throughout the duration of the course and for the very positive feedback! Understandably, they are very excited about joining the BASC / Baronscourt Deer Stalking Scheme and getting out with one of the Estate’s experienced guides to put their newly acquired skills into practice.
Our final words of thanks go to the Estate’s Head Gamekeeper Stephen Po***ck and his dedicated team, for their hospitality and assistance during the course.
Our next DSC1 course will run at Baronscourt Estate in February of next year. If you are interested, please contact the office directly.
