Sometimes we borrow things from Le Pigeon , and sometimes that’s a bottle model. Thanks jeremy for the assist.
This Thursday, we have for you:
Roblet-Monnot Saint Francois 2021 Volany
A true Volnay specialist, Pascal’s family has roots in the village dating back to the 1600s. An early adopter of biodynamic viticulture in the 1990s, he combines very low yields with a low-intervention approach in the cellar to craft elegant, refined expressions of Volnay. Named after François’ father, Saint François blends fruit from multiple lieux-dits across the Volnay slopes, each vinified separately to create a complex, balanced expression of the village as a whole.
Only at Canard Burnside

School maybe back in session, but it’s still summer, friends!
On the Canard Burnside cocktail menu, a lil Negroni riff to keep you that perfect temperature:
🍓Strawbully: with strawberry washed rye whisky, infused campari and vermouth.
Stay cool, don’t freeze🥶
Stay hot, don’t melt 🥵

🌋Our Italian wine hearts are erupting right now in anticipation of this Thursday’s wine special:
2021 Benanti, Pietra Marina, Etna Bianco
Since the very beginning in 1988, Giuseppe Benanti has been dedicated to showing the extraordinary potential of Carricante grown in Milo on the slopes of Mt. Etna.
Mt. Etna, on the eastern side of Sicily, is Europe’s most active volcano, rising just over 11,000 feet, roughly the size of our very own Mt. Hood.
The Carricante for this wine is grown at a staggering 2,600 feet above sea level, where volcanic soils, elevation, and the influence of the Mediterranean come together.
Its name evokes the landscape that surrounds it: volcanic rock, flint, minerals, and salty sea breezes. Today, it is widely considered one of Italy’s most distinctive, elegant, and age-worthy white wines.
A true expression of Etna 🌋

All this week, Canard Burnside is participating in Dirty Drinks
August 24–30, Canard Burnside is joining the Dirty Drinks campaign, connecting the beverage industry back to its agricultural roots. For every Dirty Drink sold, $1 goes directly to farmers through Zero Foodprint, helping restore the climate by rebuilding healthy soil.
To date, Zero Foodprint has awarded more than $9.5 million in grants to farmers, supporting projects that have drawn down more than 240,000 metric tons of carbon.
Our Dirty Drink? The Viper: a dirty Vesper with caper brine, Corsican blanc vermouth, olive bitters, and lemon oil.
Savory, dirty, delicious, and for a good cause. 🍸🌱

This is one of our favorite “sleeper wines”...
2019 Domaine De La Butte, Le Haut De La Butte, Bourgueil
Jacky Blot’s Chenin bottlings from Montlouis are the stuff of legend, and due to that, his Cabernet Francs have always flown under the radar. Balanced, complex and full of varietal character, this wine is not to be missed! Don’t tell Andy Fortgang, but we may have pulled a couple bottles from his private stash to share with you all! 🤫😬
