Fueling my body the right way 🍅🍗
Homemade tomato & chicken soup loaded with protein, fiber, and spinach…
Now, does the spinach make it look Instagram-aesthetic? Absolutely not 😂

🥣 Recipe
1 red pepper
1 yellow pepper
1 red onion
6 cherry tomatoes
5 vine tomatoes
100g spinach
4 garlic cloves
100ml chicken stock
2 chicken breasts
175g low-fat cottage cheese
Roast the veggies and garlic in the oven at 180° for around 40mins. Add to the blender with the cottage cheese, stock and spinach and blend to desired consistency! Add shredded chicken at the end and serve 🍗
If you want a little crunch then roast some butter beans, crush and sprinkle on top before serving 😋

Another HYROX in the bag. We did the same race last year, and shaved a bit of time off this year which we are buzzing about! You know what though? We got these tickets last minute, so training was ... Limited 🫠
But .... We didn't shave off time because it was easier, we shaved it off because over the last year we have kept choosing the small habits that made us stronger - on the floor, in the gym and in the chaos of raising 3 children.
Progress isn't always loud, but with the right consistency it is always there and it is ALWAYS worth it.
