Hello, I’m Cathy. ❤️
If you’d told me years ago that I’d be teaching visitors from around the world how to bake traditional Irish bread, I probably wouldn’t have believed you!
My love of baking began in the family kitchen. I can still remember standing beside my nanny as she cooked soda farls on the griddle, filling the house with that unmistakable smell of freshly baked bread. My mum was always baking delicious cakes and fairy cakes, while Aunt Joy was famous for her wonderfully fluffy pancakes. Those moments sparked a love of baking that has stayed with me all my life.
Although my career took me in a different direction, working as a Research Technician and later Laboratory Manager at Queen’s University Belfast, I’ve always believed that baking is a little bit of science too. Measuring, mixing, experimenting and understanding how ingredients work together is what makes every bake special.
In 2015, Noel and I opened The Rocks Bed & Breakfast, and it wasn’t long before guests began asking about the homemade breads served at breakfast. That inspired me to create my Traditional Irish Bread Making Experience, where I can share not only the recipes that have been passed down through my family, but also the stories and traditions behind them.
My classes are relaxed, hands-on and full of laughter. Together we’ll make authentic Irish breads, enjoy plenty of freshly baked treats, and hopefully create memories you’ll take home with you.

Well done to Tour Guide and Historian Sean Napier and the members of the United Irish Historical Society for staging the now Annual re-enactment of the Trial of United Irishmen Henry Joy Mc Cracken at the Assembly Rooms Belfast.
We follow in the footsteps of Mc Cracken and his devoted Sister Mary Ann.

Happy 04th July to all, I spent day day guiding a senior English ladies group to Carrickfergus joint Andrew Jackson/US Ranger Centre where the fantastic George Mc Grand talked to the group.
We then moved onto Antrim to view Lough Neagh, have lunch at Clotworthy House then do the Tour of the gardens with brilliant Ranger Guides Chris and Pete.
The guests loved it !
