What Bruce Lee meant here, is that the same idea applies to martial arts, as you can understand distance, timing, pressure, composure, and counterattacking intellectually, you can even know exactly what you are “supposed” to do, but then a sparring sessions becomes a reality check.

Suddenly distance feels different, openings seem to disappear, and your body becomes tense. In simple words, plans collapse, while reality exposes the difference between what you think you know and what you can actually express under pressure.

This does not mean mindset, visualization or theory are useless. Of course, they can prepare you, but they cannot replace contact with reality.
