Makes approximately 24 bliss balls and takes 30 minutes to prepare.
In a large bowl, combine 2 cups almond meal, 1 cup vanilla protein powder and 2/3 cup desiccated coconut. Add 1 tsp vanilla extract, 60g honey and 1/3 cup cold water, mixing until a dough forms (add a little extra water if needed).
Take enough mixture for one ball, create an indent, place a raspberry inside, then shape the mixture around it to form a ball. Repeat with the remaining mixture and 24 raspberries.
Place the balls on a tray and freeze for 15 minutes. Meanwhile, melt Β½ cup dark chocolate chips in the microwave in 20-second increments, then stir through Β½ cup coconut milk until smooth.
Place extra desiccated coconut in a shallow dish. Dip each bliss ball into the chocolate mixture, then roll in the coconut to coat. Store in the refrigerator for up to one week or freeze for up to three months.
