Easy vegan dinner (that doubles as tomorrow’s lunch) 🩵💕
If you want something simple, filling, and easy to batch cook, this one’s perfect 🦩
Cook once, eat twice 🌊
🍴 Roasted chickpea & sweet potato bowls (4 servings)
Ingredients:
🎀 2 sweet potatoes (chopped)
🌊 1 tin chickpeas (drained & rinsed)
🦩 1 red pepper (chopped)
💕 1 courgette (chopped)
🤍 1 red onion (sliced)
🩵 1 cup quinoa (or rice)
💕 1 tbsp olive oil
🎀 paprika, cumin, garlic powder, salt & pepper
🌊 handful of spinach or rocket
Instructions:
1. Preheat oven to 200°C
2. Toss sweet potato, chickpeas & veg in oil + spices
3. Spread on a tray and roast for 25–30 mins
4. Cook quinoa or rice while that’s in the oven
5. Divide into containers and add fresh greens
That’s dinner sorted, and lunch ready for tomorrow 🦩
