This is a delicious nutritious dish you can have for lunch, brunch or dinner packed full of fibre. A Veggie one pot wonder. I simply used whatever veg I had in the cupboard and fridge, chopped them up seasoned well added some mixed beans , tinned tomatoes, garlic & onions. (OPTIONAL) I used sweet potatoes and peppers added some coconut cream or you can use coconut milk and not forgetting some good quality extra virgin olive oil. Placed in the oven on medium to high heat for 35mins or until the sweet potatoes are cooked through nicely. You can add a protein of your choice or eat solo or with sour dough bread . Your gut will thank you for this comforting, delicious & nutritious dish . It’s a hug 🫂 in a pot !
